Pastrymancer, a pastry shop specializing in creative and robust treats, is new to the downtown Rochester scene; Yet, it’s already shifting our views on what the manifestations of sweet and savory pastries should look like. With each new batch, the shop’s owners and pâtissiers push the boundaries of traditional baked goods to create something far more unique and extraordinary.
Behind the case at Pastrymancer are delicious rotating Jam Bars, rotating Thumbprint Cookies, Gochujang cookies, and pastry puffs filled with a Chinese 5 Spice Plum Jam made with fennel, star anise, cinnamon, Szechuan peppers, and cloves.
Opening their doors on June 28, 2025, the pastry chefs at Pastrymancer began conjuring up some of the most uniquely creative pastries imaginable in Downtown Roc. Their confections are daring and bold, at times rough around the edges, but uniquely experimental, made with ingenuity, and designed to send your taste buds on an unparalleled adventure.
At Pastrymancer, you can find traditional desserts like Cinnamon Buns, Oreo buttercream brownies, and sugar cookies. If you’re an adventurous eater, you can explore some of their more robust rotating dishes, including the Beefy 5-Layer Sandwich roll, made with taco-style beef, refried beans, cheddar, and topped with a drizzle of nacho cheese and sour cream, and rolled up in a freshly made bun.
Pastrymancer’s sandwich rolls are far out and some of the most unique pastries you can find in Rochester, NY. While they serve traditional rolls like Cinnamon Buns, they also whip up concoctions like the Buffalo Chicken Roll and the Beefy 5-Layer Sandwich Roll.
